This month is all about luck! And what’s luckier than a delicious, gluten-free & dairy-free version of your favorite St. Patty’s Day treat? Because let’s be honest… this holiday just wouldn’t be the same without Irish Soda Bread! Fun fact- did you know that in Ireland they don’t put raisins in their soda bread? Apparently, they put raisins in their scones – not their soda bread. Well… our recipe uses currants or raisins.
Irish Soda Bread
Dry Ingredients:
-1 1/2 cups white rice flour
-1/2 cup tapioca flour
-1/2 cup white sugar
-1 teaspoon baking soda
-1 teaspoon baking powder
-1 teaspoon salt
Wet Ingredients:
-1 large egg
-1 cup buttermilk (if dairy-free use buttermilk substitute)
Optional Ingredients:
-3/4 cup currants or raisins
Instructions:
-Preheat oven to 350 degrees
-Spray a 9 inch round cake pan
-Combine the dry ingredients in a large bowl.
-Whisk together wet ingredients in small bowl.
-Add the wet ingredients to the dry bowl and stir just until the dry ingredients are moistened.
-Stir in the currants, if using them.
-Pour mixture into the greased pan.
-Bake for 60-70 minutes or until a toothpick inserted into the center comes out clean.
-Let cool for 10 minutes before removing from the pan.
*Wrap bread in plastic wrap or aluminum foil and let stand overnight for the best flavor. (This tip is from allrecipes.com site and is very useful!)

So Delicious no longer produces the Coconut Milk Kefir and I haven’t been successful in finding another ready to buy source. What can you substitute it with?

I was wondering, can I use a cup-for-cup GF flour instead of the rice & tapioca flour? I don’t have those two flours on hand, but do have GF all purpose flour.

Hi Becky! We recommend trying an all-purpose flour that does not already contain xanthan gum as an ingredient. Please let us know how it turns out! Happy St. Patrick’s Day 🙂

Sounds good but this is not traditional soda bread. Call it a currant or raisin loaf maybe. Soda bread ingreadients are flour, salt, baking soda and buttermilk. I have yet to be able to produce gf version of the soda bread my mother used to make.
